2 large oranges
1/4 cup lemon juice
1 cup sugar
2 cups water
Peel oranges and cut in 1/2 inch slices. Place orange slices in a large pot and add 1 cup cold water for each whole orange. Cover and let stand for 24 hours. After 24 hours bring to a boil, reduce heat and simmer until tender.
Add sugar and lemon juice and continue to cook until transparent. Fill jars with sections and syrup mixture, leaving 1/2 inch headspace. Adjust lids and process.
Process: Pints or quarts – 0 – 1,000 feet – 10 minutes, 1,000 to 6,000 feet – 15 minutes, above 6,000 feet – 20 minutes.
Makes: 1 pint
Note: This recipe was scaled down to 1 pint so you can adjust to what ever size you like.
