Tips when canning

  • Have a towel around the jar and one over the ring when tightening
  • The timing for pints would be the same as for quarts if a recipe gave it for quarts and you wanted to use pint but you can't go in reverse (eg. use timing for pints but use quart jars). The reasoning is at going to a smaller jar only runs the risk of over processing which is a quality issue. Going from a small jar to a larger jar using the same processing time would result in under processing which is a safety issue.
