What sort to choose(grow)

For salsa and stewed, basically anything that requires peeled and seeded tomatoes go for a thick, meaty paste tomato like Amish or Giant or Roma VF paste. Gardengnome would highly recommends Sweet Millions for cherry tomatoes. They should grow good indoors.


Long term storage

Saving the fruits (on the plants) from frost

When the first frost comes, if you still have tomatoes coming along, here's a very easy way to save them.

No need to wrap each one in newspaper. If you have a dry basement or other unused space that will not freeze, simply pull up the tomato plants roots and all, shake off the dirt and hang them upside down so that none of the leaves touch the floor. The tomatoes continue to ripen very slowly, they do not rot, and you can easily see which ones are ripest without having to unwrap a bunch of newspaper.

Saving the fruits from frost

Pick all the tomatoes before the weather gets cold and wrap each one in newspaper and put them in paper grocery bags. Keep those bags in the house in a closet away from too much heat and as you check them you can tell which ones will ripen next and just place those toward the top of the bag for the next time that you check.

Green tomatoes will ripen (slowly), if you store them in the dark, in a cool (not cold) place

Freezing

It is possible to freeze tomatoes: Dry off, vacuum pack (suggested), freeze.

Using: The skins will probably slip off as soon as the tomatoes gets heated up, so suggest using for soups etc (where that don't matter). No idea if the tomatoes can be defrosted and used as as fresh (but I guess not).
