Ingredients

  • 4 cups mashed banana
  • 4 cups sugar
  • 4 tbsp lemon juice
  • 1/2 teaspoon cinnamon
  • yellow food color (optional)

Instructions

Put all of the ingredients in a saucepan over medium heat and slowly bring it up to a boil, stirring occasionally.

Let the jam boil for 5 or so minutes. Add food coloring if desired. I did because it was kinda yucky looking. Scoop off foam.

Pour into washed jars and can in a water bath following the usual method. I boiled for 15 minutes since tha'ts what we do all other jams at.

Makes 8 half pint jars – you can easily double the recipe if you need a larger quantity. I used wide mouth half pints and 3 pints so I doubled it when I made it.

Storing

Or you can just pour the jam into a clean jar and pop it in the fridge – it won’t last long anyway!

Usage

This jam is great on toast, you can spread it on pancakes, you can use it in muffins and it’s perfect for a milkshake..
