Slice polish sausage into "pennies" and fill jar to 1" headspace
1/2 water 1/2 vinegar and fill to headspace

Waterbath 30 min

This worked with just about anything meatwise in tubular form. I pickled some bologna by quartering the slices and packing them loosely in the jar.

To the pickled meats I added pickling spice, hot peppers, and they were great.

One really neat thing about the canned hotdogs, they were basically like vienna sausages. They expand during the vacuum process and when you open the lid they shrink back.
