Watermelon Salad

This refreshing salad is delicious and ideal as a snack or light dessert in the heat of summer.

a 2-pound piece watermelon (preferably seedless [just for comfort])
1 lime
1 tablespoon chopped fresh cilantro leaves
1 1/2 tablespoons light rum, or to taste

  1. Remove rind and any seeds from watermelon and cut fruit into 1-inch pieces.
  2. Into a bowl finely grate zest from lime and squeeze enough juice to measure 2 teaspoons.
  3. Stir in watermelon, cilantro, and rum and toss to combine.
  4. Chill watermelon salad 15 minutes.

Serves 2.
