Chicken Oat Patties
From Self-sufficiency
1 can (10 ounces) chicken, drained and flaked
1-1/2 cups oat groats
Add oats to 3 cups of boiling salted (1 teaspoon) water. Cover and simmer 30 minutes or until oats are cooked, grains are split, and water is absorbed. Add chicken and mix well. Drop by 1/3 cup onto a lightly oiled skillet heated to medium high heat. Flatten and cook until browned. Turn and brown the other side. Serve with thyme sauce, if desired. Makes 12 patties.
THYME SAUCE: 3/4 cup plain yogurt, 1/4 teaspoon salt, 1 teaspoon crushed thyme leaves.
